  • 7 el olijfolie
  • 125 g magere spekreepjes
  • 600 g witlof, in partjes
  • 1 el honing
  • 2 el tijmblaadjes

Dep de schol droog met keukenpapier en bestrooi de vis met zout en peper.

Verhit in een hapjespan 2 el olijfolie. Bak de spekreepjes knapperig uit. Voeg de witlof toe en bak in 6 min. knapperig gaar. Schep de honing en de tijmblaadjes erdoor en verwarm nog 1 min.

Verhit intussen in 2 ruime vis- of koekenpannen de laatste 5 el olijfolie. Bak de schol 4 min., keer voorzichtig en bak de vis aan de andere kant in nog 1-2 min. gaar. Serveer de schol met de zoete witlof.

Lekker met gekookte (nieuwe) aardappelen.
